Sure glad to find such a great web site or I should say a great bunch of people that make for a great site. Did a bit of smoking about 25 years ago ( just venison jerky ) with a Big Chief smoker and it was not to bad. Now I am going to get back into it but this time with better equipment and hopefully build my own smoker in the near future , like start it this week. I know I am going to be asking lots of questions as time goes on but one of the first questions hopefully can get answered soon. Recently we filled all our deer tags and now I have three deer to process. Is it OK to freeze the meat and thaw it out at a later date to make sausage and jerky.

No don,t have a 2436 but I do have a 750 stubby Omega & a 1000 Stubby . just love making shaving and now I will be able to put those shavings to another use. SMOKE THEM.

Did you get them from my fellow Nashvillian - Mr. Jordan? I've always liked the bowl capability of a Stubby - but have only used one at a symposium though. I spend too much on smokers and fly fishing rods to buy me a bigger lathe. Biggest I have now is a Nova - love it though.
