The inlaws got me the OBS for Christmas and I think I have a problem :)
I smoked some chicken last week and it was fantastic and I've been scouring the forum for ideas, tips, tricks, etc. I'm getting ready to put some cured (I hope it's cured, see my other post in curing section ) salmon in for a cold smoke in about 30 minutes.
I'm planning on doing some Ribs and chicken tomorrow (Chicken on bottom, right guys!!!!) and can't wait to taste the ribs. This forum is fantastic and I look forward to spending more time it as I progress. The forum is certainly about the members and this forum has some rock stars for sure.

Welcome TB and yes chicken on bottom. As far as salmon never cold smoked any but I am sure someone will be along to help out.

I only cold smoke salmon. You're gonna love it. After you smoke let it sit, wrapped in the fridge over night for the flavor to develop.
