Post by: Big_T on December 31, 2010, 10:13:40 AM
I understand the concept but any suggestions on how often this should be done on my OBS?

I go from top to bottom, back to front.

racks from top to bottom:

2

3

4

1->4
4->3
3->2
2->1

How often would you suggest making this rotation?

It would depend on what you're smoking Big_T.  Only certain items call for it.  What are you planning on smoking?

Generally speaking, smaller items that smoke/cook faster benefit more from rotating more often.

Jerky, chicken wings, etc. I would rotate every hour or so.

on the other end of the scale, I rotate pork butts every four to six hours if at all.

One more question, would you make the rotation if you are using a circulation fan?

I do not have a circ fan but if its done correctly and evens out the temp throughout the box, then rotation would not be necessary. If you have several ways to check the temp you can profile the unit placing probes in different places in the tower and noting the difference.
