Title: Fast Eddie's Bacon

Fast Eddie's Bacon...errrrrr it is more like Old's sun tanned bacon.

3 pounds of Smithfield thick sliced hickory bacon. Smoked 2 hours 40 minutes using hickory @ 205F or abouts. It took 3 double racks to smoke it all at one time.

Now resting in frig waiting for tomarrow to come out and become part of the greatest tasting BLT in town... [:D]

Hey it might not be as good as your ho-made, but then again I did not have to purchase 50 pounds of bellies either. [^]

Note: Next, time I will lower the smoking time to 1 hour 40 minutes. To much of a bite this time. This is due to me single layering them instead of stacking one on top of another one--two to the stack.
