Title: Water bowl for sausage?

Hello everyone,
Just wondering how many of us keep the water bowl full when doing sausage/snack sticks? Lately I've had it full when I start and just let it empty on it's own....no refills. Does it make a difference?

Yes, keeps the sticks moist. I use a large SS pan in my smokehouse full of water.

The big sausage makers IE: Seltzers, Berks and the like use wet saw dust which creates steam.

I use a disposable foil pan in my smoker. It is much larger than the pan and after I just toss it out.

You want to keep enough water in it to extinguish all the pucks you use.    Most smokes are short enough, 2 hrs, that it's not a problem but some times you want to add more smoke.    In that case you might have to add water.
