I got an A-Maze-N Smoker for cold smoking on christmas and I finally got to use it this weekend. I decided to smoke 2 blocks of cheddar and 2 blocks of colby jack cheese.

Yeah it seems too. I tried to light it without the butane torch (emty butane) and then decided to run out to the store and get some butane.

I got to get mine made one of these days. Rick I know you have a 6x6 but will a 6x8 fit in the bottom of the Bradley? I guess I could make one of each?

yeah Greg it will fit. just dont use the heat or your bradley or it will ignite the saw dust.
How much heat did it add to it? Looks like something to use in other type of cookers.

If you light both ends the temp gets around 110* and can melt the cheese. yes you can use it in other cookers.
Are these store bought or home made?

Sorry to ask I'm intrigued by it, How do you set up your smoke generator with it, I mean, the Bradley one? I know you don't use it but do you set your cold smoke setup or you attach your smoke generator as you would hot smoke?

Toker - I just set the A-Maze-N Smoker on top of my smoke generator and light both ends with the butane torch that came with it.
Rick - 110 degrees? I must not have had mine lit well enough. It was about 70 degrees outside when I used it and the highest the cabinet temp got was 85. I did have my water pan filled with ice.
Could you just park it on top of the v-tray? There shouldn't be anything dripping into it, should there?
I wouldn't think so, but I am new at the cold smoking thing.... NEPA's should have some more input.
Yeah it was that with both end going.
You can sit on the v-tray if you like buts its more stable on the bottom.
So its been a week since I cold smoked the cheese and I couldnt take it anymore so I opened up one of the Smoked Chedder. ;D ;D ;D Man it was good. I mean really good! So now I have a question. I have 3 other blocks vac sealed in the fridge. How long will they stay good? Can I freeze them?

Usually cheese doesn't freeze well. It becomes crumbly. Folks have kept vac sealed cheese in the fridge for months. One of my friends doesn't even begin to eat his for at least 3 months. Others have kept as long as a year. If by chance it starts some green mold (very unlikely if vac sealed) just cut is off.

Look at the dates on the cheese. Some of the cheese I just bought has late 2011 dates.
I have found a block in the back of the fridge that I smoked a year later and it was good.
Freezing cheese tends to make it crumbly

I would not freeze cheese, last time I did it came out dry and crumbly.
I rarely even vac pack my cheese, I have smoked cheese in the fridge that I did about 12-14 months ago and its as good as it was when I put it in there. I wrap with plastic wrap and put into a zip bag, thats all.
