Title: Smoked queso blanco?
Post by: adriandb on January 05, 2011, 09:48:19 AM
Has anyone ever smoked a cheese like this? I have some at home that I'm not going to use right away and was thinking of throwing it in with the cheddar I'm smoking. Any advice?

Yep Let us know how it turns out in 14 days when you pull it back out of the fridge and do a taste test!!

Will do. Any recommendations on how to rest the cheese? Wrap it in paper towels or just toss it in ziplocks?

I vacuum seal mine, but others just wrap tight in plastic wrap, then pop into a freezer bag.  You'll want to get as much air out as possible.

So far all I can say is that the queso blanco held up fine through the smoking process. I'll taste it in a week or so.
