Hello to All,
I've been making my own sausage for many years and do a slab of bacon every now and then. I live about 13 miles from my local slaughter house which provides me with a lot of my fresh meats. I get most if not all of my supplies from Detroit Butcher/ Packer, and can recommend Len Poli's website as a good source for sausage recipes. http://home.pacbell.net/lpoli/
The wife and I have done some competition BBQ'n for about 10 years, but now just pretty much cook for private parties. I use a pit manufactured by Dave Klose from Huston, Texas. My sausage smoker is a Li'l Harry Smoker Plus Smokehouse, which I purchased many years ago from Butcher/Packer. It continues to serve me well.
