Title: Polish Sausage

Yesterday I mixed a batch of polish sausage, just put them in the smoker and gonna hit them with some hickory in awhile. Once they come out gonna put them in some vinegar to pickle them. Has anyone tried pickling sausage. How long should they pickle for before they pick up the pickling flavor. ???

Yup

Make home made smoked sausage in a pickle solution just bout every month. Cut them sausage so the pickling gets into the meat. Takes about a week but the longer they sit the better. I always make extra so my supply hardly runs out. I have friends that like lengths and others like slices.

Thanks Nepas, never thought about slicing them that's a good Idea especially around Christmas, easy just put them out and let people dig through the jar. How long would they last on the shelf in the pickling solution.

I have had them on the shelf for 4 months. If you fill the pickling solution all the way over the top as to not have any air in the jar they will store for??? years i guess. Thats why i have them on the cookie sheet to catch the over flow.

i made the ones out of Ryteks book. they were good. I left them whole sausage's about 6inch links in 32 mm casings. Took about a week to get the flavour.
