Oh my! 32 deg outside and I got 37lbs of jerky meat in the smoker today! Am I a fool, or what?! Ha, so far so good, 7 hours in and about 6 to go! 20lbs Teriyaki and 17lbs of Pepper & Garlic... mmmmmmmmmm

I like to think the answer to that is that the smoke does something to our brains. I have 6 lbs going in the OBS. I'd love to see a picture of what 37 lbs looks like ;D

The Pepper & Garlic. I use a Hi Mountain Pepper Blend base, then I take Lawry's Garlic Salt (be sure it's garlic salt, NOT garlic powder) and then sprinkle it with coarse ground black pepper. Both of these are to taste, but I lay them on fairly heavy. I like this blend as opposed to using the Hi Mountain Pepper & Garlic.

So the 37 lbs came out to 19.75lbs finished product. Not bad, considering I usually only get about 50% return. As soon as I get it all bagged up I will take a pic and post for ya! 79 1/4lb pkgs!!! Not a bad day. It only took about 8 1/2 hours to smoke the whole batch. Not bad considering it was right at 32 deg all day long!
