Title: Hunters Tangy Flavor

I put an order into Butcher and Packer and they sent me a free 8oz pack of hunters tangy flavor with instructions to use 1.5oz for 25 pounds. I have never used this before and was wondering if this is like fermento? Or citric acid? Where would be a good recipe to use this? I am planning on making a batch of pepperoni for our next pizza bake off and wondering how it would work in this?

I went to their website but there is nothing listed for it. I can't find anything on the internet about it. Was kind of hoping someone else had some experience with it.

I just made some sticks today(still in OBS) and used that very stuff.  I have use it a few times before in the amount you stated
but did not really find it made too much of a taste difference.  Today I used it as per NePaS directions at 1tsp/lb, only did 1lb and the
other five got the buttermilk treatment also as per NePaS.  THANKS NePaS ;)  I'll have to let you know tomorrow how they taste.
Only problem is a got them all mixed up and don't know which ones they are anymore.  I'll have to sample a bunch as I also added a
whack of chipotle pepper to the mix, so I pretty sure they will stand out.
