I received a BDS 6 rack for Christmas and finally got to use it this weekend! I was so excited! I was also a little worried because it was -16.8 degrees C outside and stayed that way most of the day. Good for the cheese but I had to cover the smoker to keep the temperature up for the chicken.
I smoked some marble cheddar, cheddar, salt and paprika in the morning and then smoked a chicken using a Rickard's red beer can chicken stand to do the chicken in the afternoon. I finished the chicken off at 300F in the oven. It was divine!
The leftover chicken got used in some grilled cheese sandwiches and served with a sweet millionaire relish - so good!
I have pictures but the picture icon only gives me [img] - how do I load them in? ???
