Pitfalls? not a lot of big ones, but there are a few...
Keep the top vent at least 1/4 open.
You are cooking by (in most cases) meat internal temperature and not time.

I always keep my vent full open. You need to get the moisture out or it will keep smoker moist and cooler temps. Ribs using the 10.5 recipe is always a good one to start with.
Chicken is a good way to start. You can you legs, drumsticks, wings...
Apply a little olive oil & your favorite rub. Fully open the vent & smoke with apple, cherry or whatever you like for 2 hours max. Set the smoker at the higher temp.
Hope this helps & I'm sure others will also have great ideas for you!
Welcome to the forum Frank. I started out making jerky. It is a fairly simple process, it is done in a relatively short time and you get good results. I found it a useful excercise to help judge how the smoker performs; how quickly it heats up and cools down, how much you have to keep an eye on it - or not and how to judge when your stuff is done. Lots of recipes at http://www.susanminor.org/
Enjoy your smoking.
welcome frankthetank this here is the thread that i used for my first smoke its very helpful
