A little more information may help us help you.
such as are you preheating, is the smoke generator on, vent position and things like that.
Windy?
Is it windy?
Wind is worse than cold.
J C i live in NW PA like FLBR said the wind is the worst i have been smoking in my shed blocked for the wind and use and old work sweat shirt around cabinet but dont block the vent at all this needs to watched closely due the risk of fire
JC, I put a beach towel over the front of mine. Goes from the front of the vent on top and drapes over the sides of the door. Easily raises the temp 15*
as SL2010 said, it does not block the vent
I had this same problem this weekend, temp would not go above 210. Once the pucks stopped dropping I removed the water pan and the temp shot right up to 225. Could the water in the pan be what is stopping the higher temps, water can't go higher than 212 unless pressurized? And are you suppose to leave the water in for the whole cook? And if you remove it after the smoke will it effect the moisture of the meat?
the water serves to catch not only the pucks but to also dilute the grease. If you remove the water you are going to have a bowl of grease which to me would seem to represent a fire hazard. After my pucks are done, I always change my water and again before going to bed on an overnight cook
