Title: How much to add?

Hello everyone,
I was going to ad some spices to an already great recipe and was wondering how much to add? I was thinking along the lines of 1Tbsp per five pounds of meat......what do you think?

I think i got this from nepas on here

10 lbs 2 table spoon   5 lbs 1 table spoon
2.5 lbs .5 table spoon  1 lbs 1 1/4 tea spoon

Hope he can confirm these amounts or not i had asked when i was making summer sausage.

also if you like the heat do 2TBS cayenne and a half cup of crushed red pepper to 5 pound batch of LEM puts a real nice bite in the SS
