i stuffed 10 pounds of ss today planning on a smoke tomorrow. weathers gonna get messy so i may not be able to. how long will the ss stay in the fridge before i HAVE to smoke it? im using the red synthetic casings with the deer printed on it.
The things I have read and what people have posted is in
between 12 to 24 hrs. I have gone 36 hrs once.
if it get to the 24 hour mark i would smoke and either finish it in the oven or try poaching it but with summer sausage i was told to put the sausage in while it warms up to between 160 - 190 f so u do not split the casing.
