My second project of the winter from the same book, I normally use a top secret recipe from NePa but decided to try something different

Ready to Smoke

All Done

This had a different taste and texture than NePa's recipe as his has a lot of garlic in it , Overall it tastes pretty good plain, Will try in a Gumbo this week for the real taste test
