What is your preference? any pluses or minuses for either?
Have only used the Tenpoint5 recipe. It was excellent. From what I remember reading here I think that most prefer to dry cure their bellies.
I like to dry cure with 1 TBS MTQ, 1 TBS Brown Sugar and 1 TBS of Maple Syrup per pound of belly.
I also use dry cure on all my bacon turns out great
