Welcome Remi

Depends on the Ribs.  I prefer Spare Ribs.  They are done when they are done.  At 225-250 they will likely take 5-6 hours (maybe longer if you have a full smoker).  I prefer a blend of Hickory, Oak and Pecan and use smoke for most of the way.  Make sure you have boiling water in a foil drip pan.  You'll need to refill it about half way through the smoke.  I don't do the foil thing.  Just put in the pucks and let em go.  I try not to open the door for the first three hours.  about half way replace the water and shut the door.  Then check about every hour or so.  As soon as the meat starts pulling away from the end of the bone your done.

They gave you two great options.  Try them both.  I like 3 hrs smoke on mine.
