Title: any apple sausage recipes out there

looking to do apple sausage.

thinking of just justing a regular sausage recipe and just throw 2-3 granny smith apples into a 5lb batch. 
has anyone ever heard of using applesauce in sausage to make it taste like apples?

Yes you can use applesauce. Its adds moisture and kinda binds the meat some. For a 5 lbs batch use 4 oz.

I've never tried fresh apples, but dried apples will also work great to incorporate apple flavor into sausage. For five pounds of sausage, use about 8 ounces of dried apple, reconstitute them, dice them up, and mix with the ground meat.
