Title: Salmon egg Caviar
Post by: jondom6916 on August 18, 2005, 12:10:44 AM
Has anyone smoked Salmon eggs.?  After brining and draining them  overnight,  I smoked some on a plate for a few minutes.  Tasted great !!!  Better than than the regular store bought Caviar, by far.  Any recipes would  be appreciated.

Can't help you either. I've got some recipes (that I've never tried) for making caviar out of salmon eggs and also something called "botargo" which is salted, dried, sausage-shaped roe. Reading through the recipes I see no mention of smoking the roe but you could probably add it to the process. The recipes are from a book published here in British Columbia called "Smoking Salmon and Trout" by Jack Whelan. It is an excellent book to have on the shelf for fish smoking knowledge.
