Title: deer polish sausage

It,s been a bit since my last post, but this last batch of sausage turned out great. I used Ryteks recipie and a few extra spices, it was a 50/ 50 mix of venison and butt roast.

Going try to post pics of 20lbs of sticks im working on this weekend but all depends on the kids they may want to go snowmobiling ;D

Looks great, I am trying to find a good recipe for venison summer sausage. Do you think that would work? Would I just need to put them in bigger casings?

 Thanks guys for the coments, Watchdog summersausage is a bit different it has less pork and a souring ajent like ECA or fermento added. This is just a polish sausage batch or kolbasa recipe.
