Very Nice! What size of casing did you use on these?
Thanks guys, I used 21mm collagen casings.
Remember to Practice Safe Stuffing...Please Use a Casing!!! ;D
I can see a national ad campaign now.
OF course the only casing size sold will be the ___ I will let you fill in the blank :)

I guess I missed that one :o :o
dbondy,
Are you temp probing your sticks or just laying the probe on top of the sticks? Maybe I'm looking at it wrong .....kinda looks like it in the picture.
I missed it too. Glad to finally have the secret now
one of the ingredients is Mace.
Mace is the ground up outer fiber/shell of nutmeg.
Nutmeg is a sub for mace.
The temp probes were just sitting on top of the sticks, I used two of them because I don,t trust the one probe I have.
Them slim jims look gooood!
I gotta make some again.
