So I got a couple cornish game hens to cook. I stuffed them with lemon wedges rolled in some hickory smoked kosher salt. Then I used the Pinch of Sizzle All Purpose Rub on the outside of them. Loaded the Tommy Ring in The Big Easy with applewood and cooked them to a IT of 170 ;D

Great looking midget yard birds muebe!! Or now that we have new sheriffs in town do I need to be PC and say ... " little chicken yard birds " ??? ;D ;D

Crank up that SRG with a puck or two till it is smoking then turn down low. With the lid down you should get good smoke penetration but I would leave the lid slightly propped so you do not smother the pucks too much.
