Title: first try at summer sausage

nothing better to do on a snow day.
mixed venison and pork last night.  here are 3 logs.  in the smoker right now drying out. 
cooked some meat last night to taste.  it was a little salty.  if i just use insta cure #1 instead of the cure that came in the box will that reduce the taste of salt?

I think the salt flavor mellows after smoking, chilling, freezing, etc. I am not certain though.

You must have used a Hi Mountain kit?

Thats why its salty.

Looks good JC.  I am finding out that Hi-Mountain anything has a high salt content.  Their breakfast sausage surely does.

I've use the HM kits for SS and didn't notice the salty taste.    I`ve got another kit and plan to use it when it warms up  some.   -31 right now and all I want to do is stay warm ;)
