How did I miss this recipe? Can someone hook me up?
Cilantro Potato Salad
final version....maybe
I have been making this for years and over time got it to what I think is awesome eats. The following recipe is based on a per pound of potatoes. Better make more than pound, you will be sorry if you don't.
Ingredients
1lb of new red potato
1/4 lb of crisp fried crumbled or chopped bacon
3 heaping tablespoons of Kraft mayo
1 rounded teaspoon of minced garlic
1/2 ts of black pepper
1/4 cup of finely diced sweet yellow onion
1/2 of a lime (juiced)
1/4 cup of finely chopped cilantro
I cubed my potatoes as to not get too big of cubes so they all kinda cook the same. Put enough water in pot to cover the amount of potatoes you are cooking, add salt and turn on high. Dump in taters bring back to boil and then turn it down to low. When your largest chunk of tater just starts to get soft shut it down and dump into a collander. Don't rinse all that good stuff off the potatoes.
In a large bowl add: mayo, garlic, pepper, cilantro and lime juice. stir together and let sit for 5 mins or so. Dump half of the bacon in and mix then the potatoes. Add the other half of bacon and fold everbody together. When you are ready to eat this you can top it with chopped green onion tops. Yum Yum
DAD, you will love this stuff. Defenitely make more than a pound!

(Mrs can't eat onions and she doesn't like cilantro)

Made up 5 lbs last nite for a friend who is having a get together.
We are having a wild game party in a few weeks and I think I might make this for one of the sides. Is that a 1/4 pound of raw bacon or 1/4 pound of crumbled?

For every lb you make use a 1/4 lb of raw bacon crisp fried and crumbled.
The crisp bacon stays crunchy longer.
I figured that was it, but then ya just never know. Is there ever too much bacon. Not sure of the ratio between raw and crisped, but it has to be 3 or 4 to 1.
If I make 2 lbs of potato salad, I'll use a 12 oz pkg of Bacon.
4 lbs will get two 12 oz pkgs.
5 lbs gets 3/12 oz pkg.
Also after I posted this I adjusted the ingredients.
That was a old copy. This one posted now is what I do.
Everytime I bring this somewhere I am asked for the recipe
by abunch of people.
Recently I cooked for a wedding and there was 125 pl plus there.
I gave away 12 copies of the recipe.
