Title: Chicken Enchiladas

Smoked up some chicken this weekend.

Was lookin for something to eat when I got home lastnight.

This is what I came up with, Chicken Enchiladas.

1/4 pound chicken, some Adobo seasonings and a little hot sauce and a wad of cheese in each one.

In a pan with enchilada sauce and some more cheese, cooked till bubbling hot.

Warmed up some re-fried beans and its Dinner time!!

Onion and jalapenos would be great but I'm cookin for a couple girls and once there in the pan its hard to keep track of the hot ones.  ::)

Wow, nice OU!!

That reminds me, I bought some tortillas & now I think I know what to do with them......

Yep the younger ones! I got a whole new crop coming in and will have to do the same thing!   ;)
