Title: Brisket egg rolls

This is one of my favorite ways to use leftovers.... make egg rolls.  ;D

Started out with an onion, garlic and when they were golden dumped in some diced brisket.

Wile that warms up and the brisket starts to fall apart take a couple pounds of coleslaw and add about a cup of teriyaki sauce and mix well.

When the brisket has shredded its self and got to know the rest of the guests in the pan dump them in with the new party guests.

Lay out an egg roll wrap and make an egg wash, paint three of the corners and drop in 1/2 cup of the brisket mix.

Do this 19 more times.

And wrap each one in plastic wrap then throw in the freezer for a later date.

A taste test, outta the fryer.

That looks great!  I got some leftover brisket in the freezer that would be perfect for that!  Did you buy the egg roll wraps of make your own?

I bought the wraps, there in the vegie ilse, go figure.

Curt, I want that "magic" fryer - it makes golden brown eggrolls outta green eggrolls!   ;D ;D ;D

For party appetizers, I'll make smaller ones using wonton wrappers.

Yep.  ;D

I have used pulled beef, smoked chicken and turkey too.

I just kinda wing it.  ::)

But its basically; 1 large onion chopped
                     3 cloves garlic minced
                     5 jalapenos chopped, seeds N all (didnt have any at this time)
                     2 Tab oil
                     1 lb meat
                     2 28 oz bags of ready made coleslaw (not the stuff with the dressing already mixed in)
                     1 cup Teriyaki sauce (I like La Choy)
                     2 packages of egg roll wraps
                     1 egg to make the wash (I use the bottom half of the empty egg to measure the water)

Saute the veggies till golden and they smell good but not done, add the chopped meat stir and place on a lid.

In a large bowl mix the teriyaki with the coleslaw and set aside.

Make the wash and have the wraps ready.

When the meat starts to fall apart remove the lid and continue cooking till the veggies are done then dump in with the coleslaw mixture and mix well.

Paint the top and side corners with the wash and place 1/2 cup loosly filled with the meat mixture on the wrap.

Do it quickly as the meat mixture will start to draw the moisture out of the coleslaw mixture.

Hope this makes sense.
