Title: SS and snack stick question?

when making snack sticks and SS...after stuffing the casings does it have to sit in the fridge or can i put it right into the smoker?

Its up to you. If you do fridge make sure the sticks or SS does not touch and dont cover with anything, you want air to move around. 90% of the time i mix, stuff, hang at room temp while my smoker comes up to temp and then hang to smoke.
