Smoked my butt last weekend and vac sealed. Have it thawing now. 12.5 lb brisket rubbed with with Gun Powder and wrapped this morning. Put it in the OBS at 6:45 this evening. See pics below for weather conditions here in Dallas and just how great the OBS is kicking it!

I preheated the OBS to 200* and threw that hunk of meat in. It was up to to 225* in 45 minutes. I have the OBS on the front porch, away from the wind and any more snow.

Warming to 34 today Gus, roads are metling. Com on down.
SoCal, I do not have the second element. I was surprised it reached the temp it did as quick as it did. I think having it on the front porch out of the wind helped. When I pulled it out after the 6 hrs of hickory, the cabinet temp was 243* and outside temp was 20*.
Finished in the oven over night. Took about 16 hrs to hit 190*
DAAAAAAAAAAAMN.

Your menu is ambitious and that brisket is beautiful. It doesn't look as if the tough weather bothers you at all. I am spoiled here in Ca., temp now at 65* and expecting in the mid 70's tomorrow

Sliced it up after 3 hrs of FTC. Sorry no pics of that. Wife and daughter rushing me out the door to go to lunch.
I will say the gun powder rub is a hit. Had to beat them back from eating as I sliced. Told them they can have all they want tomorrow.
