Title: Canadian_Smoke's "Secret" Dipping Sauce/Mop
Post by: Canadian_Smoke on August 23, 2005, 06:11:44 PM
I already know that I'll be receiving faaaar more than I give when it comes to helpful tips and information but, I thought that I would share the receipe for my favorite Dipping/Mop Sauce.

Let me start by saying that I certainly didn't invent this on my own, I simply took a receipe from some cookbook and made some modifications to suit my personal tastes. Over time I ended up with the following:

Ingredients:

1 - 8 oz can of Tomato Sauce
1 medium sized onion diced up med fine
1 medium sized clove of garlic minced fine
1/2 cup brown sugar
1/3 cup white vinegar
1/3 cup corn syrup
2 tablespoons prepared mustard
1 tablespoon chili pepper
2 oz bourbon or whisky (I use Jack Daniels)

Directions:

1. Combine all ingredients except the bourbon or whisky into a medium sized sauce pan.

2. Heat over med to med-high heat stiring regularly until the mixture comes to a boil.

3. Add the alcohol, reduce the heat and simmer for 5-7 minutes.

If you are going to use it as a mop and a dipping sauce, split the batch into two parts and put the portion to be used for dipping into the fridge. Reheat this portion prior to serving.

I use mop this sauce onto smoked ribs and finish them on the BBQ for that slightly crispy texture. I also use it as a dipping sauce for pork and beef tenderloin and on smoked chicken pulled sandwiches.

My wife refers to it as Scott's Hard Sweet and Sour Sauce.......I just call it good and I hope that some of you will too [:)]

Canadian Smoke

I made your sauce for some BB ribs yesterday and my wife loved the
sauce so much I am sure I'll be making it often in future.

                     thanks

That is fantastic!! I'm really glad that your wife liked the sauce [:D]

I can now, in all good conscious, start trying some of the other receipies around here knowing that I've given a little back for all that I'm about to take [^]

Thanks, CS--sounds delicious. I'm sure Olds will be adding it to the Recipe section of the FAQ board.
