Title: Lamb Sausage

Met Morgan (TestRocket) to pick up a couple of 10 lb butts he picked up for me on sale. Swung by the meat market and picked up some hog casings to make sausage. On the way home I was trying to decide what type to make and came upon the idea of lamb sausage.So I stopped at Publix looking for a boneless lamb roast. They only had a semi boneless lamb leg, so I had them de-bone and ground one up for me.

Could only find a recipe for Greek Loukaniko which is made from lamb. So I googled and found a couple of other lamb sausage recipes. Took ingredients from a number of them and came up with my own variation.
Mixed some spices in wine and a little water

Mixed up the meat and stuffed. Stuffed and ready to go into the fridge.

Tomorrow I'll wrap and freeze some of them. Now I still have to figure out what type of sausage to make with the 10 lbs of cut up pork I have in the fridge.

Hope my wife doesn't see this, she'll have me making Lamb sausage.

That is one of her favorite meats.

Don't you just LOVE them hog casings?

I'm curious to see how you like the sausage Gus.  My butcher makes a hot lamb sausage.  Tried it twice.  Neither my wife or I care for it even though we love lamb.  The texture was dry and crumbly.

Maybe I'll give it a shot if yours comes out good.

TR- It is lamb sausage. Haven't used the butts yet.

Arnie - haven't tried the links yet, but made a patty with the remnants from the stuffer and fried it for breakfast. Was good with an egg on top. I was going tof ry up a couple links for lunch later. I'll let you know.
