I just joined up because I bought a Bradley Original smoker about a month ago and I am completely new at smokin. I have tried numerous items like Chicken and Pork Butt and they came out fine. i want to try and smoke some cheese soon, as soon as I can get some more info on doing that, because I don't want to make a mistake with a big block of it.

Hello and welcome to the forum. There are many experienced veteran smokers here who are more than willing to help...just ask. As far as smoking cheese...it is well worth it. Just remember to keep your temps at 80 degrees or lower when smoking cheese. Having the Bradley cold smoke adapter or making your own adapter will help keep those temps down. Also you can use a tray or water bowl filled with ice to keep the temp low. And also open the door occasionally to let the heat out. 2-4 hours of smoke is good depending how much smoke flavor you like. Choice of wood varies from person to person. The batch I did with Alder was excellent. Also make sure you vacuum seal the cheese and place in the fridge for at least two weeks to age...the longer the better it gets ;D
