Title: New from Devon UK
Post by: Devonboy on February 15, 2011, 01:17:46 PM
Hi guys, love the attitude of people on the forum, I have so many questions!
Started with my new digital smoker before Christmas and so far cold smoked salmon,
hot smoked trout, mackerel and belly pork. I'm now looking at some cods roe wondering
if I got it right!

Happy days

Welcome Devonboy. I have never smoked fish yet but I hear it is delicious. Take a look around and enjoy yourself. You say you have questions so feel free to ask when needed. Take care and happy smoking.

Hi Devonboy,
I am also in the UK and smoked some cod roe last season.  Posted the operation on here and someone referred to it as 'fish bait' but they don't know what they are missing ;D. It takes the smoke well. I had left the first batch in brine too long so it was a bit salty but I have done some more a couple of weeks ago and it was great.  I hot smoked at about 160oF for a couple of hours and it was enough to cook it so that it held together as a solid lump but was not dried out. Depending on the size it may need more or less time but experimentation is good.
Enjoy your smoking.

Welcome Devonboy.  Glad you and the Bradley started off on the right foot.  Sounds like a long and fruitful relationship is building.

PS - If you haven't noticed - we like pictures.  I'm particularly interested in seeing that roe
