Would i be better off to vac seal after applying my cure? Last time I just put into bag and expelled most of the air by straw.
I never have, yet, but am thinking I might give it a try. Would have to be carefull though not to suck too much of the cure into the machine. That might gum it up
I did this when curing a brisket flat for pastrami.
I did not notice and significant benefit, it did not shorten the curing time.
I am on the same boat as FBR.
Also I can buy a big roll of plastic wrap cheeper than a roll of vacume bags.
I'm just sayin.
I haven't Vac sealed my bacon as of yet. But like mentioned above. Ziplock bags are cheaper than rolls of vac bags
Thanks all, I will be going the bag route, have 22 lbs of bellies to do. The first 20 lb batch didn't last very long, dammit :) ;)
I vac all my cureing bacon and canadian two saves spills and a day or two of time for me drined pizza or cake not good ;D
