Use the largest tube that you can get the casings on and see if the stuffer will deal with the stiff meat with out adding water. You can always stick on a large tube and shove the meat out and add some water. I know you do not want to add water if you do not have to.
I have stuffed cold meat before and it can work. You can also kick up the water pressure on the well. The stuffer will handle the extra pressure. No guts no glory.

I stuffed 10lbs cold right out of the fridge thru a 3/8 tube with no problem only cracked the water valve a little bit
Well there you go. That's just what I wanted to hear.
the 4 inch stuffer with 60 pounds of water pressure has 754 pounds of force pushing on the piston.
