Title: Soy Jerky

I purchased two Bottom round roast yesterday and sliced them up a 1/4" thick and trimmed the fat off. I used a recipe I found on here somewhere http://gnipsel.com/recipes/jerky/soy-jerky.html and changed it a bit to my liking, only half the amount of hot sauce and Dales instead of soy sauce. I soaked them overnight and they went in the smoker at 6:01 AM this morning.

It ended up being 6.5 pounds of meat after trimming, I noticed in the pictures I could have trimmed a little more fat but it aint like I'm loadin it up in my saddle bags and going on a three month journey cross the Oregon trail ;D Just looked at the Thermometer, Its 25.9 ° F. this morning outside, might be a long smoke ;)

Dales is great stuff. i smoke fish with just dales, but i use it on everything

As long as you store it in the fridge it will be fine.
One thing I do is wrap in papertowel before I put it into ziplocks. It just absorbs the little bit of condensation that can form in the bag.

Heres a picture of a few pieces that got done early. It is really good tasting. I used light brown sugar instead of Dark brown sugar and I should have used the dark. Hard to explain the flavor, kind of like sweet & salty with a medium hint of teriyaki and I used Special Blend Bisquettes. Im happy with it ;D

Good lookin pile jerky you got there.

Teriyaki jerky is my daughters favorite and every time she comes home from collage she takes a bunch back with her, along with a lot of other goodies.
