Title: Mini Chub Links
Post by: NePaSmoKer on February 20, 2011, 10:16:36 AM
Doing my stuffing this morning finally. Re mixed the meat, added 1/4 cup of water and started to get the Kirby stuffer ready  ;D

Was undecided on casings 17 or 32mm. Here are the 17mm on the tubes.

Decided to go with the 32mm

Had to cut a hose down some first.

Got the valves shut where needed and started to stuff.

The water in valve was hardly even cracked open when the meat started to extrude.

This stuffer rocks. Very little learning curve.

You are just a lean mean stuffing machine. Very nice Rick and to pickle them is just icing on cake.

Rick
I see you pickle a lot of different sausages. Do you have different recipes and if so which is your favorite. The last time I tried it I used a recipe I found on the internet and it tasted crappy. I threw the whole batch away.
By the way I had a friend over last week and he brought enough goose breast to do a gallon of Pickled goose. He called me this morning and eventhough they were not supposed to get into it them until a week. His son-in-law and a friend got into them and were downing them one after another. He wanted the recipe because they had a beef heart and a couple of beef tongues. Some people will eat anything. I am great with the heart but ????with the tongue.

Yeah when we were kids my mom tried to feed use cows tongue. I have to admit it was alright till she told us what it was. There is just something about eating some thing that can lick it's calves ass and then dive in to the food trough is just not apealling.
