Title: My version of Chicken Enchiladas

Well after seeing how good OU812's chicken enchiladas looked, I had to thaw out some of the hatch chiles and make my own.

Four breasts with Jan's rub and the chiles

Four chiles up close.  Diced them seeds and all

Smoked the breasts for 1 hour with pecan.  Temp was about 220*.  Was not worried about temp as they would go straight in the crock pot

With a can of cream of mushroom, sour cream and the diced chiles.  Cooked about four hours.  Shredded the chicken in the mixture.  I did not even get to make enchiladas as the boy walked in and just threw a bunch in a flour tortilla and ate it like a burrito.  Wife came in and just started eating straight out of the pot.  Then she made two little rollers with corn tortillas.  I did manage to save enough to actually make enchiladas tomorrow.

I have never frozen peppers before...do you roast them, vac, freeze and then defrost....or vac them unroasted? I really want to try Hatch peppers...

Every year here in Texas markets have a big Htach Green Chile festival during the harvest season.  The market roasts them for you. I bring them home and vac seal.  Some say to prepare them (not sure how, someone has posted on this before though) before sealing.  This was the first time I have ever frozen them.  I see no difference in them after freezing and thawing as compared to fresh.  They are awesome.

Ann roasts them, peels, then dices first. Then I vac pack them and freeze them. They work just great aftrer a quick thaw in the fridge.

Them peppers are GREAT!!

See what I mean!?

Some chicken and peppers some sour cream and cream of some thing makes a killer filling to what ever,
we use as dip also.
