Title: Pork and Beef

I finally ventured to my first long smoke, I did a pork butt and a chuck roast. I put on a spicy mustard and Jans rub on the pork and just Jans rub on the beef. The pork was done in just under 19 hours and the beef took 21 hrs and I took em both to 190* IT. I FTC'd both of them for 2-3 hrs approx. I was very happy with the end product especially the beef. And I would do it again. It certainly is a test of patience though, especially when the temperature stalls. I do eventually need a 2nd heating element to make it go a little faster, but I wasnt cooking under a deadline so it was all good. Now you've suffered through my ramblings, on with the pictures...

Looks awesome!  I've been picking at pulled pork all weekend....I know you must have been too. Put some on those small corn tortillias for a quick snack...just meat.

Niiiiiiiice.

The bark on them hunks of meat looks GREAT.

Both piles of pulled meat look very juicy too.

Hope you put them juices in the foil pan to good use.  ;D
