Title: Cajun Rubbed, Apple Smoked, Beer Blasted corned beef

So I cold smoked a "Punch Ya Daddy" rubbed corned beef brisket (store bought - Grobbel's) on Sunday...     Tossed it in a freezer bag and into my beer fridge for the night.

Last night I put it in my pressure cooker with a bottle of 1554 (http://www.newbelgium.com/beer/detail.aspx?id=5ac72c92-fd87-4ec7-858d-3380c8d465d8) and another bottle of water.

60 minutes later..  (and the kitchen smelling of apple smoke/beer steam)

All in all, pretty tasty.  You could taste the Apple smoke, and the PYD added a nice zip.

Looks great STC! How long did you cold smoke it for?

The 1554 is too dark/heavy for my tastes..      I like their Fat Tire amber ale the best - in moderation.

It made a couple nice corned beef sliders with some of my favorite mustard...

I buy it by the case...    Cheaper that way.   One of my garage cabinets doubles as my 'mustard vault'.   ;)

Nice Squirt!

I have two briskets to start corned beef with.  I also have a bottle of that beer  ;D  AND I have a new electric pressure cooker  ;D   (I had a very long conversation with my husband about how it was not a new toy since it was a replacement of the one that died)   I may have to copy you again ;)

I love mine and use it a lot.   But yes, it does take up some space..
