Title: Stupid question from yours truly
Post by: KyNola on March 08, 2011, 06:57:44 AM
I have ordered and received some smoke sausage seasoning from a company in Prairieville La.  I am not yet ready to start sausagemaking 101.  My question is this.  Can I use the mix to make ground meat jerky if I use it in the same proportions for sausage making?  Example: 5 pounds of ground meat for sausage making vs 5 pounds of ground meat for jerky making.  Use the same amount of seasoning mix?  It does already have nitrite and dextrose included in the mix.

Thank you for your advice.

I have took whats left in my stuffer when making summer sausage and put in my jerky gun and shot out strips on the racks for my dehydrator then dehydrated them like jerky.

Turned out GREAT.
