Does anyone cook sausage they have made or bought in the bradley? If so what temp and for how long and with what wood???

I smoke some suasage on occasion, I get it from a pork store near Raleigh. My friend brings me 15lbs (5lb links) when he comes up to visit but it's good enough to make the drive 3hrs one way. I usually don't cook it just a couple of hrs of apple smoke then vacumn bag it. We give away a lot at Christmas and Thanksgiving and I usually take a bag with me when we go camping.
I use a lot in recipes is the main reason I only smoke it, want to release that good suasage taste into the recipe.
