Completly new to smoking... I have a small 2 lb pork loin that I have dry rubbed and bacon weaved. Planning on using apple smoke...I have a 4 rack digital...how long do I smoke and how long do I cook and at what temp?
You want an IT around 148-150 in the center, probably a couple of hours.
I cook lean things like a loin with a cabnet temp of 250 - 260 F and pull the loin outta the smoker when the IT hits 145.
Allow to rest 10 - 15 min and the IT will rise to 148 - 150 wile resting.
It will only take about 4 hr to cook that baby so keep an eye on the IT.
Oh Ya IT stands for Internal Temp. ;D

I've never done a pork loin before, so I'll not comment.
In the future try a pork butt. They're easy because they've got more fat in them, so getting them tear-apart tender and juicy is quite easy. I set the smoker at 230 deg and try to get the butt to 200. I did a 4.6 lb boneless but this weekend. Put it in the pre-heated OBS at 8:30 am and was at 180 deg at 6 pm. Should have drug my lazy bones out of bed a little sooner. It was done and tender, but not fork-ripping tender like higher temps will do.
Don't go that high with loin because there's not enough fat in the loin muscle.
