The snow is off of the deck, cleaned up the OBS over the weekend and it was 38o F this morning, so ...
Rack 1 - Extra sharp cheddar, muenster, two pepper jacks and two slabs of Gruyere that I cut (almost) in half.

Rack 2 - More pepper jack, a pound of Tillamook Swiss cut in half and, of course, some Mozz.

Preheated the SG and used the PID to get the cabinet up into the 70's. Average smoke temp was 80-85. One hour of apple and 40 minutes of pecan.
Out of the smoker.

Cooled outside; no bugs with these temps. Just have to watch for bird fly-overs. ;)

It knocked the SG loose but luckily nothing permanent.
