Title: Jerky chunks

Thought I would try some jerky chunks. I bought 5 lbs lean stew meat from Costo, I mixed up the corect amount of Hi Mountain Jerky Cure and seasoning (original blend) and aplied it, then I sealed it up in the marinating canister and into the fridge it goes for a few days. Then smoke for a couple of hrs and then into the dehydrator.

Bear I plan on doing this also. I also have the same Foodsaver marinade container that you do. It appears that 5lbs of stew meat will fit perfectly into the container...sweet ;D I think I am going to use a teriyaki marinade on mine.

Ya, it fits very nicly in there. Actual weight is 4.83 lbs after triming, but I could have fit another 1 lb is easy, I just stacked al the chunks tightly together.

So how long in the Bradley? Smoke? Temp? and how long in the dehydrator? Temp setting?

2 hrs in the Bradley smoke @ 160* and 10 hrs in the dehydratyor @ 160*.
