Title: Landjaeger PT Duex

Going to do more cept this time with cure #1 and smaller casings.

Mixed my mix up and added 1.5 Tbs mustard seeds for Lumpy  ;D
And added 2 Tbs buckwheat flour.

Stuffed into sheep casings. Rinsed in and out and soaked in water/vinegar.

Cover em and fridge for tomorrow..........But wait you say never cover em? What gives...... Ahhh grasshopper........No collagen casings.

After tasting the cure 2 batch i just dont wanna wait. Besides if this batch turns out good i will make 5 lbs and take to Nola next month.

Taking a different path on em. Made em small links with the ends peenched  :D

Just in at 130* no smoke for 1.5 hours.

Is this the same mix you used on the first Landjaeger? Have you ever thought of dropping some of this in the dehydrator and see how close it comes to the first batch you have hanging in the shower.

This batch is the same mix but i used cure 1 so the shelf like on the counter is only a day or 2 then it has to be in the fridge or freezer. I never really liked using the dehydrator with sticks. Maybe i should try it soon.

I guess I was curious how close the two taste would be? I know I would try a little just for the education. I might be tempted to strip the skin off a little to see how it would dry compared to one with the casing still on.
You would have to admit if it turned out close it would be very nice.
