last night I installed a PID in my proofer and it worked awesome. I can't believe how steady the heat is.  had to make a few adjustments on the offset but otherwise it was very simple.  going to install a second one with a pin thermocouple to install in the meat to shut down the entire system when IT is reached. I would reccomend them to anyone!!

Got any pics so other members can get ideas?

My smoker/proofer has new electronics and is really stable for maintaining the heat and fan.

I wired my pids so the SYL1512 Controls the SYL2352, but then I thought if a don't pay attention to Temp the pids would start up when smoker cooled.
To remedy this I added auxiliary contacts to my contactor and a start button.
When the IT reaches set temp smoker will shut down and a light will turn on and won't restart until the button is pushed.

That pic was when we got the vent in and then there was 8" of snow. Its in my smoke shop now  ;D
