Hi all, I am From Bungendore NSW in Australia.
I am soo excited ;D I got my 6 rack DBS and I am giving it a go today, Trout and Marlin.
I used a Grill Fox and after a few beers during the smoke everything tasted pretty good after it.
Pretty hard to keep temp and from barbecuing the fish.
Has anyone got some quick tips on Trout and Marlin?
I use a wet brine and cryvac when cool with a mix of mustard and capsicum.
