Looks so good i thought HEY

Make some into sticks with a nepas twist  ;D

Ok

My mix with a secret in it  ;D Cure #1 water added while mixing.

Meat all mixed. Casings have been soaking and ready to stuff.

First smoke been done now for 2 hours. IT is 138. Going to hit em again with smoke soon.

Yup still fully operational. Just waiting for some better weather so i can do larger loads.

Getting the 2nd smoke (cold) for 2 hours.

Hanging to rest after the 2nd smoke. No need for bloom, just letting the smoke hang.

Going to leave them hang tonight and will fridge tomorrow for a day or so before cutting and vac seal.

Rick loved the video. Though I thought I heard you voice break a little when you showed the little chief smoker.

Next time swing the camera around I wanted to see the guitar pickers. I was waiting for the taste report which comes right at the end.

Mike sounds like you have a good recipe there.

Nepa....Do these freeze well? Or do you vac seal and fridge them?

Vac seal in the fridge for a month, freezer for 4-5 months.

If they are vac sealed in the freezer I've had no problem going in excess of a year. Not that they usually last that long but I have discovered the odd pack that got missed and where in excess of a year old. They tasted like they they did when they were fresh.
